Today’s Lunch

TGIF!

I’m so glad it’s Friday! I spent most of yesterday thinking it was Friday, and then I kept remembering that it was actually only Thursday.

Tragic. I know.

What’s really tragic are those morning when you wake and think to yourself, “Ah, I’m so glad it’s Saturday!” only to realize two seconds later that it’s actually Monday morning and you have to get up. Do you ever have mornings like that? I hate it when that happens.

Um, so here’s today’s lunch (did I wander off on a random topic enough for you? I’m a random person. It keeps life spontaneous and fun… I think).

This is mainly leftovers from last night’s dinner: Inari-zushi, simmered Japanese pumpkin (kabocha), sesame green beans, and kiwi.

Today’s Lunch

Here’s today’s lunch!

Homemade hummus, raw veggies (for dipping in hummus), broccoli and carrot salad, chicken deli meat, cheese cubes, a bran muffin, and a granola bar. I also included a small bag of pretzels (not shown).

Today’s Lunch

Yesterday I did both weight/strength training at home and had karate class. It’s been awhile since I did both in the same day. I somehow managed to hurt my left wrist with a bad punch, and my forearm is bruised (again), but nothing too bad. Whenever I have an intense workout day like I yesterday, it always leaves me extremely sleepy (not to mention sore) the next day. Sleepiness is my enemy! I must go work it off! …somehow! ….but man, I wanna take a nap…

Today’s lunch: Two mini-frittatas, a bran muffin, mixed nuts and dried fruit, veggie chips, and a kiwi

Here’s today’s lunch! My husband made a yummy homemade curry for dinner last night, and there was a lot left-over, so I used that for today’s lunch.

Today’s Lunch

It’s been pouring rain here all day. In the rainy season it does that all the time, so it’s a bit of a downer when it pours all day, but in the summer when it’s so hot, it’s soooo nice to have a relief from the burning sun and heat!

With all the rain came a cool front, so it’s also been in the 70’s all day. I’ve had the air-conditioning off and the windows open all day. It’s been so nice just listening to the sound of the rain and thunder, enjoying the cool breeze blowing in, and the smell of the rain. Heaven. It’s supposed to keep raining most of the weekend, and the temperatures should continue through the weekend as well. I don’t know how long it will all last, but I’m going to enjoy it as much as possible!

Today’s Lunch and Homemade Caesar Dressing

Today’s lunch: Chicken caesar pita sandwich with homemade caesar dressing and fresh pineapple

It’s quite hard to find caesar salad dressing in Japan in my experience. Plus bottled dressings always have lots of artificial ingredients in them, so I always make our salad dressings myself (super easy. trust me.). I’d never made caesar dressing myself, but I recently found this recipe on Kitchen Stewardship and had to try it out (with a few tweaks).

It’s super easy to make (just throw everything in the blender and blend), and it really does taste like normal caesar dressing!

Homemade Caesar Dressing

  • 1 raw egg yolk
  • 1 tsp apple cider vinegar
  • 1 Tbsp lemon juice
  • 1/2 tsp mustard
  • 1 1/2 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • dash of salt and pepper
  • 3/4 c. olive oil
  • 2 Tbsp parmesan cheese
  1. Add everything except the olive oil and parmesan cheese in a blender or food processor and blend.
  2. Pour in olive oil and blend until smooth and thick. Mix in parmesan cheese and serve on salads, sandwiches, etc.
