Today’s lunch: Monte Cristo sandwich, mini tomatoes, kiwi, almonds and pumpkin seeds

Tip: To keep your Monte Cristo sandwich from falling apart, assemble the sandwich the night before, wrap it tightly in plastic wrap, and pop it in the fridge over night. This will compress your sandwich and keep it together when you coat it in the french toast mixture and cook it the next morning.
